What CPU does your laptop has?
I3-3110M 2,4 GHz. Is it to weak for RPCS?
Way too weak. Persona 5 runs at 10 fps on a 6 core i7-5930k. Your i3 doesn't stand a chance and probably never will.

So I played the game and after I defeated the first Shadow, the one you fight after jumping on the balcony while trying to escape, it crashed on me and gave me this error.

i managed to go into the game. but the sound is stuttering as inconsistent as the fluctuating fps. any fix for the sound to be steady?

Don't install the DLC, it breaks it by making the game try to load stuff from the emulated blu-ray drive path which it obvious fails since this isn't a disc game.
This can be worked around though if you really want to play with the DLC, setting the dev_bdvd path on config.yml to the path of the NPEB02436 folder manually.

You can use CheatEngine's speedhack set at 0.25 to improve smoothness of the game.
When its turned on the game will work at 25% of its original speed but it allows Joker to run and apparently fixes the jumping/climbing bug that makes MC walk in the space.
You can also bind the speedhack to a hotkey and i didn't noticed any problems from using it.

Game is extremly unstable with the newest build 0.0.2-4739. I'm crashing all the time and even got 2 Fatal Errors.

That tells me nothing. Just post a log file where the game crashes.
Do you know exactly which build started to cause the issues? 0.0.2-4739 doesn't affect any games. Probably something by kd-11 here:

You can also try OpenGL instead of Vulkan (Or Vulkan instead of OpenGL)
